S'mores Parfait

When I told my sister I was happy that it was almost pumpkin spice season (autumn is my favorite time of year) she told me I was out of touch because the hot new flavor is s'mores everything. While I say that s'mores is properly a summer flavor, carrying strong memories of summer bonfires and childhood, I figured I could work with that.

Here's my adult take on childhood summers. It's less sweet and more sophisticated (a word we use to console ourselves that we are Serious Adults and no longer 12 years old) but it would still work well with a campfire.

Serious Adult S'mores Parfait:

  • 1 3/4 c. vanilla yogurt, preferably Greek or Icelandic
  • 2 TBSP cocoa powder
  • 1 TBSP sweet vermouth
  • graham crackers to cover, two layers
  • 1/8 c. mini chocolate chips
  • mini marshmallows to cover

Mix yogurt, cocoa powder, and vermouth. Put a layer of graham cracker pieces or graham cracker cookies in the bottom of a 1 cup dessert ramekin. Fill to just below the top with yogurt mixture. Put in another layer of graham crackers. Sprinkle with chocolate chips. Top with a layer of marshmallows.

Risktaking Adult S'mores Parfait

For the adult who is still likes a little adventure, toasted marshmallows, and a chance of setting your home on fire I officially Do Not Recommend that you do this part:

Use heat-resistant ramekins. Broil on low for approx. 60 seconds. Do not walk away. Do not take your eyes off of it. High risk for setting your kitchen on fire.

Makes 4 parfaits.

Serve immediately while the chocolate chips are still melty before the graham crackers get soggy
